Beast Meatloaf

Dinner is Served !! 

My kinda Meal -- Quick, Easy, Healthy Meals! 



Ingredients:

  • 2 lbs of lean ground turkey
  • 1 cup all natural mild salsa
  • 1 cup whole wheat bread crumbs (Ezekiel bread)
  • 2 large eggs, lightly beaten
  • 3 cloves garlic, finely chopped
  • 1 teaspoon salt
  • Ground black pepper (to taste)
  • Fresh chopped parsley 
Directions:

Preheat oven to 375 degrees.  Combine turkey, salsa, bread crumbs, egg, garlic, salt, and pepper in large bowl.  Press mixture into 9x15 inche loaf pan, or form into shape of a loaf and place on ungreased 13x9x2 inch baking pan.  Bake for 60 to 70 minutes or until center is no longer pink and meat is cooked through.  Let stand 10 minutes before serving.  Cut into 8 slices and serve garnished with parsley.

Pair with sweet potato and steamed green beans for a complete meal.

UnStuffed Cabbage Rolls


 I am polish and I love stuffed cabbage. Me and my girlfriends like to get together and make big batches and them freeze them. If you have ever made them you know that boiling of the cabbage can be a real pain in the rear. A friend posted this in one of my groups and so I gave it a try!! Holy Cow - same awesome taste and SO VERY EASY to make !! Family loved it !! 





Ingredients:
  • 1 1/2 to 2 pounds lean ground beef/turkey or venison 
  • 1 tablespoon oil
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 small cabbage, chopped
  • 2 cans (14.5 ounces each) diced tomatoes  (low sodium or no salt added)
  • 1 can (8 ounces) tomato sauce (no sodium or no salt added)
  • 1/2 cup water
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt

Preparation:

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

Yield: Serves 6 to 8


ENJOY!!!!!

If I were classifying this for the 21 day fix I would call it 1 red container and 1 Green container!!!!

Black Bean Chicken and Quinoa Enchilada Bake

Black Bean Chicken and Quinoa Enchilada Bake


I got this recipe from my coach. I love mexican and this one was awesome!! I love  casseroles!! Love the fact that it all goes together in one dish, bake it and all done at the same time!! Simple and Delicious.


Ingredients:

  • 1 cup uncooked quinoa, rinsed
  • 3-4 Chicken Breast (Cubed)
  • 2 cups of water
  • 1 tbsp of olive oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 Jalapeño seeded and minced
  • 1 red pepper seeded and diced
  • 1 cup frozen corn
  • Juice of 1 small lime
  • 1 tsp of ground cumin
  • 1 tsp of chili powder
  • 1/3 cup chopped cilantro
  • Salt and pepper to taste
  • 2 15 oz cans of black beans drained and rinsed
  • 2 cups of red enchilada sauce
  • 2 cups of shredded mexican cheese

Toppings (optional):  Greek Yogurt, Avocado, Olives, Green onions

Directions:

Preheat the oven to 350 degrees and spray a 9x13 in pan with cooking spray.

Add quinoa and water to medium saucepan and bring to a boil.  Boil for 5 minutes then turn the heat down and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

In a medium skillet cook the cubed chicken.

In a large skillet over medium high heat up the olive oil, add onion, garlic and Jalapeño.  Saute until soft, about 5 minutes.

Add peppers and corn and saute for 5 more minutes.
Add lime juice, cumin, chili powder and cilantro.  Stir and combine and season with salt and pepper.

In a large mixing bowl stir quinoa and black beans & chicken.  Add the veggie mixture and combine, stir in 1/2 of the cheese and all of the Enchilada sauce. 

Pour the mixture into the 9x13 pan, sprinkle remaining cheese on top. Then cover with foil and bake for 20 minutes, remove foil and bake for 10 minutes longer until cheese is melted and bubbly.  Remove and cool!


Serve and enjoy!!!


If you are doing the fix I measured out 1 yellow and also counted it as 1 red and 1 blue.
I served with a side salad which is a green.
