Texas Cavier
So this has to be one of my FAVORITE appetizers/dips to make to bring to a function !! It is super easy and with all the veggies and beans it is packed with protein , veggies and yummy goodness...If you are looking for a wonderful salsa style dish for your next function - try this one out !!
Ingredients:
- 1 Can Black Beans (drained & rinsed)
- 1 Can Black Eyed Peas (drained & rinsed)
- 1 Can Corn (drained & rinsed)
- 1 red pepper (diced)
- 1 yellow pepper (diced)
- 1 orange pepper (diced)
- 1 cup celery (diced)
- 1 jar pimentos (drained & rinsed)
- 2 jalapenos - chopped --(optional for how hot you want it)

- 3/4 Grapeseed Oil (olive oil)
- 1/2 cup apple cider vinegar
- 1/4 cup honey (it calls for sugar but I substitute)
- lime
- cilantro
Instructions:
Mix all the beans and veggies in a bowl.
Bring the oil, vinegar and sugar to a boil - let cool
Add the cooled liquid to the bean/veggie mix
Refrigerate overnight -- squeeze in fresh lime and cilantro to serve!!
Serve with Way Better Snack Chips !! (healthy tortilla chips )
