Creamy Parmesan Spinach and Mushroom Pork Chops (HFLC)

I have never cooked pork chops this way before, i was totally impressed with this recipe! It passed my test - Quick, Delicious, Easy, Minimal Ingredients and best of all its a One Skillet Meal. Im not very good at timing everything to come out at the same time.. The creamy parmesan sauce is absolutely amazing, throw in some mushrooms and spinach and make it a complete meal ! 


Ingredients
  • 1.5 lb center cut boneless pork chops
  • 1/2 medium onion sliced
  • 2 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 cup heavy whipping cream
  • 1 oz cream cheese
  • 1/3 cup chicken broth
  • 1/3 cup parmesan cheese
  • 1/2 cup cheddar cheese
  • 1 cup mushrooms
  • 2 cups spinach
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon pepper
  • salt to taste
Instructions
  1. Brown pork chops, onion, and garlic cloves in 2 tablespoons olive oil in a large skillet on medium/high (approx 3-5 minutes each side).
  2. Remove pork chops from skillet.
  3. Add the rest of the ingredients, and cook on medium until sauce thickens. Make sure to use a whisk and stir continuously.
  4. Add pork chops back to sauce mixture and simmer on low for 5 minutes or until done.
  5. Serve!

I think that most of us strive to eat healthy but many times we are faced with what is convenient !! 

Its TIME TO PULL OUT THE CROCK POT !! It can be your best friend. As long as you have an idea of what you want to make --- It makes cooking easy! I even started prepping in the evening and putting the crock pot in the fridge overnight.. In the morning I just have to turn it on !!

Turkey Meatballs - 21 Day Fix Extreme


Just another AWESOME recipe that is in the 21 Day Fix Extreme plan. Perfect for the whole family or to portion out and have some for later in the week. These were super tasty and great as a snack or a meal.



Makes 6 Servings - 5 meatballs each
1 Red, 1/2 Green, 1/2 Yellow

Ingredients: (non stick cooking spray)
  • 1 1/2 lbs  -- Lean Ground Turkey Breast
  • 1 tsp Sea Salt
  • 1 tsp Dry Mustard
  • 1 tsp Smoked Paprika
  • 1 Large Egg ( lightly beaten)
  • 3/4 Cups quick-cooking rolled oats
  • 2 Cloves garlic, finely chopped
  • 12 fresh parsley sprigs, finely chopped
  • 2 Tbsp tomato sauce, no sugar added 

Directions:
1. Preheat oven to 400 F
2. Lightly coat large baking sheet with spray, set aside
3. Combine turkey, salt, mustard, paprika, egg, oats, garlic, parsley, and tomato sauce in a large bowl; mix well by hand
4. Roll mixture into 30 1 inch meatballs. Place on prepared baking sheet. 
5. Bake for 15-20 minutes, or until no longer pink in the middle.

Buffalo Chicken Chili

Buffalo Chicken Chili 

If you like buffalo chicken - you will love this !! It has fall written all over it ! 

This is a great one for tailgating!! This is low fat and packed with protein !! Great choice when you are surrounded by all those tempting high fat tailgate foods. 

I really love this recipe it is quick and easy, it is yet another one that I can make in advance and freeze. However if I am going to freeze this one I make a double batch. 



Makes 6 servings, 1 cup each
1 Red, 1 Green, 1/2 Yellow

Ingredients: 

  • 1 tablespoon canola oil
  • 1lb ground chicken
  • 1 - 15 oz can white beans, drained and rinsed
  • 1 small onion chopped
  • 1 large carrot, finely diced
  • 2 large stalks, finely diced
  • 3 garlic  cloves minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 tablespoon paprika
  • 1/2 tablespoon cumin
  • 1/4 cup hot sauce (franks Red Hot)


Preparation: 
1. Heat oil in pot over medium- high heat. Add Chicken, paprika, and cumin.  Cook  until browned.
2. Add the onions, carrots, celery and garlic - cook for 5-8 minutes, until the vegetables begin to soften. 
3. Add tomatoes and hot sauce, bring to a boil, then reduce heat to low. Simmer for 50 minutes. 
4. Stir in white beans and continue to simmer for another 5-8 minutes or until the beans are heated through. 

Salt and Pepper to taste. 
Optional: top with Crumbled Blue Cheese & or Shredded cheese upon serving
