Turkey & Sweet Potato Hash




You want simple easy and tasty ?? This is it ! 
I love one skillet meals ! This was one of the recipes that came with the Country Heat workout. 

Its all about balance.. You have Protein, Veggies and Carbs all in one dish !!

Serves 4 
3/4 Cup Servings


Ingredients:
  • 2 tsp. olive oil
  • 1 medium onion chopped
  • 1 medium green bell pepper, chopped
  • 2 medium sweet potatoes, peeled, chopped
  • 1 lb. raw ground 93% lean turkey breast
  • 2 cloves garlic, finely chopped
  • 1½ tsp. finely chopped fresh thyme (or ½ tsp. dried thyme)
  • Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
Instructions:
1. Heat oil in medium skillet over medium-high heat.
2. Add onion, bell pepper, and sweet potatoes; cook, stirring frequently, for 8 to 10 minutes, or until onion is translucent and sweet potato is tender-crisp.
3. Add turkey; cook, stirring frequently, for 5 to 6 minutes, or until turkey is cooked through and sweet potato is soft.
4. Add garlic and thyme. Season with salt (if desired) and pepper (if desired); cook, stirring frequently, for 1 minute.
Container Equivalents (per serving, per Country Heat nutrition guide): 
½ GREEN, 1 YELLOW , 1  RED , ½ teaspoon

PoppySeed Casserole



Ever have a recipe that you make that reminds you of someone or something?? 

Well there is a story behind this one.... It goes back over 20+ years ago ! 

My husband and I (boyfriend back then) were invited over to my sisters house for dinner -- My mom shared that she was making some dish called PoppySeed Casserole !! 

Seriously - What the Heck was that?? 

So being the Smart Teenagers that we were , Merv and I went to the nearest McDonalds Drive thru and ate dinner on our way to her house... 

Joke was on us !! We both LOVED It !! 

Moral of the Story -- Dont judge a book by its cover ! Ya never know unless you TRY IT !! 

20 years later I make this dish on a regular basis and the whole family loves it!! 


Ingredients: 
1 1/2 lbs ground turkey
1/3 cup chopped onion
1/3 cup green pepper
2 - 15 oz cans of tomato sauce (No HFCS)
1/2 tsp Himalayan Salt
1/4 tsp pepper
1- 8 oz package of wide No Yolk Noodles
1- 8 oz cream cheese
1 cup cottage cheese
1/2 cup plain or greek yogurt 
1 Tbsp Poppyseed

Directions: 
Cook Turkey & Onion and Green Pepper
Add Sauce, Salt and Pepper
Cook Noodles 

Mix Cheeses w/ yougurt & Poppyseed.
Toss with Cooked Noodles 

Layer a 9x13 Dish 3/4 full with the noodle mixture
Add Meat to the center of the Noodle mixture 
Add remaining noodles to the top

Bake Covered 375, 30-35 Minutes
Uncover - Bake for 10-15 more minutes

Turkey Meatballs - 21 Day Fix Extreme


Just another AWESOME recipe that is in the 21 Day Fix Extreme plan. Perfect for the whole family or to portion out and have some for later in the week. These were super tasty and great as a snack or a meal.



Makes 6 Servings - 5 meatballs each
1 Red, 1/2 Green, 1/2 Yellow

Ingredients: (non stick cooking spray)
  • 1 1/2 lbs  -- Lean Ground Turkey Breast
  • 1 tsp Sea Salt
  • 1 tsp Dry Mustard
  • 1 tsp Smoked Paprika
  • 1 Large Egg ( lightly beaten)
  • 3/4 Cups quick-cooking rolled oats
  • 2 Cloves garlic, finely chopped
  • 12 fresh parsley sprigs, finely chopped
  • 2 Tbsp tomato sauce, no sugar added 

Directions:
1. Preheat oven to 400 F
2. Lightly coat large baking sheet with spray, set aside
3. Combine turkey, salt, mustard, paprika, egg, oats, garlic, parsley, and tomato sauce in a large bowl; mix well by hand
4. Roll mixture into 30 1 inch meatballs. Place on prepared baking sheet. 
5. Bake for 15-20 minutes, or until no longer pink in the middle.

Buffalo Chicken Chili

Buffalo Chicken Chili 

If you like buffalo chicken - you will love this !! It has fall written all over it ! 

This is a great one for tailgating!! This is low fat and packed with protein !! Great choice when you are surrounded by all those tempting high fat tailgate foods. 

I really love this recipe it is quick and easy, it is yet another one that I can make in advance and freeze. However if I am going to freeze this one I make a double batch. 



Makes 6 servings, 1 cup each
1 Red, 1 Green, 1/2 Yellow

Ingredients: 

  • 1 tablespoon canola oil
  • 1lb ground chicken
  • 1 - 15 oz can white beans, drained and rinsed
  • 1 small onion chopped
  • 1 large carrot, finely diced
  • 2 large stalks, finely diced
  • 3 garlic  cloves minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 tablespoon paprika
  • 1/2 tablespoon cumin
  • 1/4 cup hot sauce (franks Red Hot)


Preparation: 
1. Heat oil in pot over medium- high heat. Add Chicken, paprika, and cumin.  Cook  until browned.
2. Add the onions, carrots, celery and garlic - cook for 5-8 minutes, until the vegetables begin to soften. 
3. Add tomatoes and hot sauce, bring to a boil, then reduce heat to low. Simmer for 50 minutes. 
4. Stir in white beans and continue to simmer for another 5-8 minutes or until the beans are heated through. 

Salt and Pepper to taste. 
Optional: top with Crumbled Blue Cheese & or Shredded cheese upon serving

Quinoa Stuffed Peppers


Turkey & Quinoa Stuffed Peppers



21 DF - 1 Red, 1 Yellow, 1 Green 

Cooking:
Set oven to 400 – cook covered for 30 – 35 minutes

Ingredients:
·         4 large yellow/orange or red peppers
·         1.25lb extra lean ground turkey
·         1 C diced mushrooms
·         1/4 C diced sweet onion
·         1 C chopped fresh spinach
·         2 teaspoons minced garlic
·         1 C (1 8oz can) tomato sauce
·         1 C chicken broth
·         1 C dry quinoa
·         *optional – cheese of choice. I used pepper jack on half and an Italian cheese blend on the ones for the kids.
Directions:
1.    In a small saucepan, start the quinoa and cook according to package directions (usually about 15 minutes).
2.    While the quinoa cooks, saute the vegetables in a pan with olive oil.
3.    Then after about 5 minutes or so, add the ground turkey and garlic to the vegetables. Cook over medium heat. Once the turkey is mostly cooked though, add in the tomato sauce and about half of the chicken broth. Let simmer until the turkey is fully cooked and some of the excess liquid has cooked off.
4.    Once the quinoa is done cooking, dump it into the pan with the turkey and vegetables. Stir together.



5.    While the turkey mixture simmers, prep your bell peppers. Wash the peppers, cut them in half, and remove the stem & seeds. Spray a 9×13 baking pan with cooking spray and place the cut bell peppers in the pan (open side up).  



6.    Stuff each bell pepper with the mixture. Make sure they are nice and full.
7.    Cook covered for 30 – 35 minutes.

If you’re opting for cheese, then top with just enough to cover the mixture, pour the rest of the chicken broth into the base of the pan (around the peppers, not over them)
