Chocolate Chia Pudding with Fruit





These little Chia Seeds that pack a big punch nutritionally remind me of Chocolate Tapioca pudding that my grandma used to make !! She would make this big huge pot and we would all stand in the kitchen with our bowls waiting for her to let us know when it was done.. See in our house it was best HOT right off the stove!!
 
It seemed so rare as most people knew Tapioca as white -- Not sure if my grandma invented her own recipe or not but all I do know is that my entire family loved it !!
 
Over the years I have tried to reproduce it -- Many batches tossed in the garbage !!
 
So here we are today and these little Chia seeds are being talked about... Hmmmm I think that its time to give it a try again and so I did !! It was really good!!
 
Serves 6 (1/4 cup each)

Ingredients:
  • 2 1/2 Cups  Unsweetened almond milk
  • 1/2 Cup Chia Seeds
  • 6  Tbsp. Organic Unsweetened Cocoa Powder
  • 2 Tbsp. Pure Maple Syrup
  • 2 tsp. Pure Vanilla Extract
  • 1/4 tsp. Himalayan Salt
  • 3 cups chopped fruit (I used blueberries)
It can be topped with Chopped Banana, fresh blueberries, fresh strawberries, fresh raspberries, chopped kiwi fruit or chopped pear.
 
NOTE: It was a little bit bitter to me -- So you could add additional maple syrup to sweeten. Since mine was already made -- I added a tsp of Almond Butter to it and it did the trick !!


Directions:
1. Combine the almond milk, chia seeds, cocoa powder, maple syrup, extract and salt in a large bowl; whisk vigorously for 2 minutes, or until cocoa powder is incorporated and pudding is well blended.
2. Let stand at room temperature for 30 minutes; mix well.
3. Divide evenly into 6 small bowls ( I used little mason jars) and top each serving with 1/2 cup of fruit.


Another Note: I wanted mine to taste like my grandmas so I warm mine up before eating - then I top with fruit...


21 day Fix  - 1 Yellow, 1 Purple, 1/2 Orange, 1 Spoon (if you add the extra Almond Butter)

Shakeology Pudding - It's not just to DRINK !!



Shakeology NOPE Its not just to drink - I never really thought about making a pudding until I started the 21 DFX program. That program is supposed to be NO CHEATS and this was accepted food that I could add to my meal plan. Well heck ya!! This tasted just like a CHEAT but there was no guilt in eating it !! YA I have found the perfect evening snack for me !! 


     
          

21 Day Fix - 
1/2 - Red, 1/2 Yellow, 1/2 Blue

Makes 4 Servings

Ingredients:

  • 1 1/2 Scoops Chocolate Shakeology
  • 1 ripe medium avocado
  • 1 medium banana
  • 1 cup unsweetened almond milk


Directions:
Blend until smooth. Pour into individual dishes, pie crust, or frozen-pop forms. Refrigerate for 1 hour or freeze until firm. Garnish with a dab of the lowfat whipped topping of your choice and some chopped nuts. 

Calories:175 per serving

Black Bean Browines

I am soooo excited to share this recipe with you !! I have made quite a few clean Brownie recipes and until today, they were not ones that I would share.. The others weren't bad and while I could eat them, they just didn't make the cut that I would ever make again.. And then came today.. It is that time of year that I bake my Christmas treats. I don't make the masses eat what I eat and I still make them their favorites that may not be clean. YES sometimes I NEED CHOCOLATE !!  I am so happy to report that I have my "Christmas Treat" that I can eat in moderation and not feel guilty  about. If you have a chocolate craving these will hit the spot !! Did I already mention that  these are super good.. I would bet that most folks would not even know the difference!!  I am going to have to make sure that I limit myself. I could eat the whole pan!! 




Ingredients:
  • 1 (15.5 oz ) can black beans, rinsed and drained.
  • 3 eggs
  • 3 tablespoons coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup organic sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup chocolate chips- dark chocolate chips

Directions:
Preheat oven to 350 degrees and grease an 8x8 pan.  Place beans in food processor and process until mashed.  Add eggs, vanilla, cocoa powder, baking powder, salt, sugar, and oil.  Process until smooth.  Pour into pan and sprinkle chocolate chips on top.  Bake for 30-35 minutes.
